Hotel Vermont and SILO Distillery Present:
Farm to Barn to Bottle
A Full Circle Dinner
Thu, Oct 19, 2017 at 6:30pm
Join us on Thursday, October 19th for a full circle dinner and cocktail pairing with SILO Distillery.
SILO is one of the few Vermont distillers doing everything from start to finish, using 100% Vermont grain and produce.
How does the SILO full circle work?
All of the grains used in SILO's spirits are grown specifically for them at Grembowicz Farm in North Clarendon, Vermont. It is then brought to the distillery in Windsor, Vermont where they mill the grain, distill, bottle, and label the final product. Once all of the alcohol is removed from the grains, they send them over to SpringMore Farm to serve as feed for the pigs and livestock. The pigs then till the fields of crops that are used in SILO's different vodkas, which makes for a true Vermont full circle!
The evening will begin with a welcome cocktail and hors d'oeuvres at 6:30 pm with dinner starting at 7:00 pm. Chef Doug Paine has crafted a very special menu highlighting Springmore Farm pasture raised, whey and spent grain fed pork in addition to seasonal grain dishes, dessert, two SILO signature cocktail pairings and more.
Curious about the menu? Here is what to expect for dinner:
SILO Cucumber vodka soup, smoked oysters, caviar, créme friache

Pork shoulder ragout, clothbound cheddar polenta, scorzenera, fennel pollen
